Gooseberry, or nellikka, is naturally sour and packed with character, and brining suits it perfectly. Salt and time bring out a clean tang without needing much else.

We keep the oil to a minimum here, just a light tempering of mustard seeds and curry leaves for aroma, so what you taste is mostly the fruit and the brine, not a thick oily gravy.
