Cloves are actually dried flower buds, picked by hand before they open and left in the sun until they turn that familiar deep brown. Kerala's spice growing belt has been producing them for generations, and the aroma is unmistakable: sweet, sharp, and a little numbing on the tongue if you bite into one directly.

A few cloves go a long way. Kerala cooks toss them into hot oil at the start of a curry, tuck them into biryani between layers of rice and meat, and add them to garam masala blends for warmth. They also show up in spiced chai and in the pickling spice mixes used across the country.

We keep ours whole and unblended, sourced with care and packed without any artificial additives, so the oils inside stay intact until you are ready to use them.
